We’ve been trying to get Mariana to London since her acclaimed residency at Fulgurances in Paris, Carousel’s Gauloises-smoking spiritual cousin. Two years on, and we’re over the moon to finally experience Mariana‘s extraordinary cooking for ourselves.
A graduate of the prestigious Culinary Institute of America, Mariana started out at Blackbird (Chicago) and Union Square Café (NYC), but it’s her on-going collaboration with the legendary Enrique Olvera that’s arguably been the biggest influence on Mariana‘s career so far, with successful stints in the kitchens of Cosme (NYC), Pujol and Contramar (Mexico DF) just some of the highlights of the past eight years.
Applying a haute-cuisine sensibility to traditional flavours and techniques from around the country, Mariana is a genuine rising star of Mexico’s thriving culinary scene. Mariana is joined in the kitchen by her equally talented husband, Ricardo Verdejo, who will be taking the reins the following week…
