Our good friend Gal Ben Moshe returns with another tour de force, showcasing the remarkable, ultra-modern and unfailingly delicious ‘New Levantine’ style that has propelled prism to legendary status in Berlin.
Situated in upscale Charlottenburg, prism both blends in and stands out. The fine-dining cues are all there, but it’s impossible to ignore the scent of white charcoal and Levantine spices spilling from the kitchen.
Driven by fire and fuelled by heritage, deceptively uncomplicated, playfully inauthentic dishes like ‘Akkoub, Scallop, Lamb Dashi’; ‘Cod, Verjus, Squid XO’; and ‘Brandy & Fig Ice Cream, Commandaria, Frozen Foie Gras, Banana Tuile’ are also underpinned by molecular precision and technique.
Gal mastered his craft in the kitchens of Maze*, Hibiscus** and Alinea***, but it was Berlin where he chose to put down roots. A suitably dynamic, multicultural city, fit for a genre-defining restaurant from a very special chef.
