Thessaloniki is having a moment, and Poster – the runaway success story from chef Vasilis Chamam – is the city’s hottest new restaurant. Rooted in Vasilis’ unique heritage (he has a Greek mother, a father who grew up in Jordan, a grandfather from Palestine and a grandmother from Lebanon), this is not Greek food as we know it. 

Now back in his hometown after over 20 years in London, Vasilis is reviving memories made around his own kitchen table years before, this time telling a story of his travels in the years since: “I still cook with the same principles in mind: “immigration, the diaspora, the moving and mixing of people, ingredients and recipes, relocation and adaptation.”

Expect worldly dishes like ‘Cabbage Souvlaki, XO Bagna Cauda, Dukka’; ‘Chilopites Pasta, Pork Broth, Mussels, Chermoula, Caviar’; and ‘Grilled Monkfish Tail, Braised Greens, Avgolemono’ on Vasilis’ full-throttle, flavour-forward menu of modern Greek classics.
