A thrilling celebration of African cooking and heritage, Vusi puts under-the-radar, heirloom ingredients front and centre, reimagining what’s possible in the process. One minute you’re in Ethiopia, eating a kitfo of finely chopped topside beef marinated in niter kibbeh before you’re transported to South Africa via the fresh-off-the-coals, mielies dressed with toasted hay butter and Baleni salt.
