Dame Jane is the low-key, low-intervention Parisian wine bar par excellence. A mainstay of Belleville’s thriving dining scene for the past seven years, its enduring popularity is all down to the brilliance of Julie Caute, an instinctive, inquisitive, self-taught talent who dispensed with the rulebook the day she stepped into the kitchen to fill the gap left by her erstwhile head chef (bon débarras!).

Guided by the seasons, and with a few magic ingredients up her sleeve, Julie’s cooking packs a serious punch. Think ‘Roasted Squash, Smoked Egg Yolk, Orange Mousseline, Hazelnut, Shiso’; ‘Oyster, Coffee Ponzu, Pulled King Oyster Mushroom’; and ‘Deep Fried Sweetbread, Gochujang Mayo, Fried Capers, Herbs Salad, Lime’.

Julie doesn’t do subtle, which makes her wonderfully original, technicolour cooking the perfect antidote to the torpor of a wet and windy London January.
