After blowing us away in 2022 with one of our busiest guest chef residencies ever, the Sydney-born chef returns with the hotly anticipated follow up to last summer’s ode to live fire cooking.
Staying true to his roots – including several happy years working alongside Tomos Parry as head chef of East London icon, Brat – Zac’s menu is another love letter to the magic of open flames.
This time it’s the coastal regions of southern Argentina and Chile that have provided the inspiration. Expect generous portions, plenty of smoke and a focus on the very best local fish, seafood and seasonal vegetables that we can get our hands on.
