Pablo Lagrange is back. Rooted in “memories, tradition, fire and the landscapes of Argentina”, his mind-blowing debut residency this summer was an instant entry into the Carousel hall of fame.
Avant-garde creations like ‘Beef, Shiitake, Lacto-Fermented Butter, Cabbage, Vanilla Hollandaise, Crispy Bacon and Pistachio Praline’ were everything we hoped they’d be, and more. Well, what else did we expect from a genuine rising star whose CV includes some of the very best restaurants in the universe (Boragó, Noma, Relæ, Mugaritz, Tickets and Pakta, to name just a few)?
This time round the Barcelona-based chef took diners on a culinary journey inspired by the regional flavours of his homeland. Dishes like ‘Pampa’ (Braised Pork, Honey and Beer Fried Empanada, Smoked Sour Cream and Rhubarb), ‘Cuyo’ (Dairy Cow, Parsley Oil, Kefir, Parsley Root Purée and Wild Mushrooms) and ‘Patagonia’ (Black Apple, Fresh Apple Popcorn Powder, Trumpet Mushrooms and Burnt White Chocolate Ice Cream) are genuinely next level.
We couldn’t dream of a better way to kick off 2020.
