Pop-up iconoclasts Caos exploded onto the Copenhagen dining scene last summer with a series of impossible-to-book residencies. Best pals and rising stars Marie Louise Westmark and Merel Martine Quint have been serving their signature style of eclectic, heartfelt flavour bombs at some of the city’s trendiest spots, including Rouges Oysters and Paloma vermouth bar. On the menu? Fun, provocative food that’s ‘designed to be savoured’.
After more than a decade working in some of Europe’s coolest kitchens, from Silo (London) and Da Vinci (Netherlands), to Baest, Nr30 and Lola (all Copenhagen), their worlds collided in Sicily the summer of 2022 and Caos erupted. Taking inspiration from their travels, the pair create innovative menus using strictly what’s in season, and aren’t afraid to give a little love to underused ingredients.
Strictly collaborating with places that match their vibe (and we’re taking that as a huge compliment), Marie Louise and Merel join us at Carousel for a week with a menu celebrating the bounty of spring. Highlights include charred spring gazpacho with cockles, mussels and homemade Caos hot sauce; wild garlic hake parcels with whey sauce; and open lasagne with langoustines and new season’s asparagus.
