Olivia’s love affair with Italian cuisine began at a young age, when she first learnt to make pasta from her nonna (her mother’s family comes from Emilia Romagna, spiritual home of the things we dream of when we’re hungry).
Inspired by her roots and her extensive travels around the peninsular – including a very happy time working with the Pasta Grannies in villages up and down the country, culinary residencies at Numeroventi (Florence) and Parco de Sesi (Pantellera), and a formative stretch at bustling Florentine osteria, Cibrèo – Olivia has fast become one of the UK’s most exciting flag bearers for traditional Italian food culture.
Celebrating Italy’s “never-ending” regional specialities, Olivia has put together a menu of wall-to-wall seasonal crowd pleasers for us that pays tribute to the warmth and generosity of Italian home cooking as it once was. Think Venetian ‘zucca in saor’ (pickled pumpkin with onions and raisins); Liguria-style ‘pansotti al radicchio, salsa di noci’ (radicchio pansotti with creamy walnut sauce); and ‘bonet’ (amaretto and chocolate flan) from Piedmont.
