In Italy, the times they are a-changin’. With its néo-bistro aesthetic and low-intervention yet flavour-forward approach, Røst, in the Porta Venezia neighbourhood of Milan, is without a doubt one of the hottest additions to Italy’s rapidly evolving restaurant landscape.
At the helm, Piermaria Trischitta – back home after a formative stretch at the legendary 108, Copenhagen (RIP) – keeps food waste to a minimum without compromising on the all important need to feed. Pia specialises in extracting every last bit of goodness (and flavour) from oft overlooked seasonal produce. His made for sharing, daily-changing menus tread a pleasing line between tradition and innovation, and feature bangers like ‘Mondeghili Meatballs’; ‘Mackerel, Sfincione, Almond, Breadcrumbs’; ‘Fregola, Mussels, Preserved Lemon, Chilli’; and ‘Beef Tongue, Red Onion, Capers’. All paired with a suitably impressive list of biodynamic and organic wines (naturally).
