From the restaurant’s emerald-tiled open kitchen, head chef and passionate surfer Federico Sisti rides the wave between tradition and innovation. Federico’s ever-evolving, seasonally-led menu features perfectly executed, contemporary versions of traditional regional classics from Lombardy and neighbouring Emilia-Romagna. Think tagliatelle with veal ragù; mondeghili (Milanese meatballs) with salsa agrodolce; and mascarpone & guinea fowl-stuffed tortelli.
