Offering comfort food in uncertain times, POPL began life as a simple burger joint launched by Noma during the pandemic. Since then, it’s evolved into a diverse and innovative neighbourhood restaurant that tells a compelling story of tradition, creativity, and craftsmanship.

Spearheaded by Toni Toivanen, and using techniques like fermentation, pickling and smoking, POPL’s young and ambitious R&D team explores Danish ingredients in new ways to create the distinctive flavours that have become its hallmark.

As for the burgers… Well they’re suitably revolutionary. Crispy, meaty, and crucially, sustainable, their ‘lion’s mane’ stack is paired with a Noma Projects dashi reduction, lettuce, and tomato; a clever twist on a classic that redefines what you expect from a burger.

A pairing of house-made juices and low-intervention wines blur the line between fine dining and comfort food, while a thoughtful collection of snacks, sides, and desserts round out a refined yet approachable dining experience that’s built to be shared and talked about.
