Offering comfort food in uncertain times, POPL began life as a simple burger joint. Since then, it’s evolved into a diverse and innovative neighbourhood restaurant that tells a compelling story of tradition, creativity, and craftsmanship.
Spearheaded by Toni Toivanen, and using techniques like fermentation, pickling and smoking, POPL’s young and ambitious R&D team explores Danish ingredients in new ways to create the distinctive flavours that have become its hallmark.
As for the burgers… Well they’re suitably revolutionary. Crispy, meaty, and crucially, sustainable, their lion’s mane stack is paired with sorrel leaves and a forest pesto; a clever twist on a classic that redefines what you expect from a burger.
For an extra dash of magic during their week at Carousel, expect Noma Projects’ Corn Yuzu Hot Sauce on the tables for a bright, aromatic hit, with umami-packed POPL-inspired drinks at the bar to complete the journey. This is comfort food reimagined.
