Rooted in the landscapes of northern Spain and shaped by stints at Mugaritz**, Pure C**, Noma*** and Nerua*, Iñaki Bolumburu’s cooking is a marriage of deep provenance and daring invention.
Born in Derio, a small town on the outskirts of Bilbao, Iñaki comes from a long line of proud Basque farmers, foragers, fishermen and hunters. Those ties to the land have informed his journey as a chef, and continue to inspire him wherever he is in the world. After achieving critical acclaim at Contrast in Amsterdam, his first solo opening, he’s now making waves in Bangkok with Amalur—a bold love letter to his roots, reframed through the lens of South East Asia’s heat and hustle.
Getting back on the road, Iñaki’s bringing his hyper-imaginative cooking to diners around the globe who seek out the extraordinary: produce-led dishes that take the very best regional ingredients and send them into another dimension with razor-sharp precision and technique.
