With its signature brand of ‘new style Chinese cuisine’, Lee Ho Fook has revolutionised Chinese fine dining in Melbourne since it opened in its original site in 2013.
There, founder Victor Liong reinvents regional Chinese favourites, taking “the legacy of deliciousness given to us by generations of Chinese Australians” and taking it in a highly personal and creative direction with a playbook of both modern and traditional techniques, and the region’s finest seasonal ingredients.
Combining Victor’s passion for exploring China’s rich and diverse cuisine with his years of experience in some of Australia’s most renowned fine dining kitchens, dishes like ‘marinated scallop, soy brown butter, salted egg yolk’; ‘Yunnan milk curd & salted garlic chive bing flatbread’; and ‘slow-roasted duck, quince hoisin, charred leek, cucumber’ have earned Lee Ho Fook cult status, numerous accolades and a place on last year’s World’s 50 Best Discovery list.
