Meet Patxi Andres. Bold, irreverent and anything but conventional, the Venezuela-born chef’s signature style is a creative mash-up of Latin American flavours, European techniques and delightful wild card ideas.
Packed with Venezuelan-rooted flavour bombs like charcoal-grilled prawns with plantain beurre blanc; spicy deep-fried rabbit with tamarind and fresh herbs; and Patxi’s rum-baba-meets-Venezuelan-bienmesabe (made with coconut and condensed milk crème patissière), Patxi’s thrilling Carousel menu reflects his adventures to date on the culinary high seas.
Like so many of our favourites, he kick started his career at World’s 50 Best perennial, Boragó, in Chile, but it’s successful stints at the impossible-to-book Mokonuts in Paris and London’s Black Axe Mangal that have had the biggest influence on his flavour-forward style.
Now back in London full-time and riding high on the success of cult side hustle, Burritos Machete, Patxi joins us on a mission to share the flavours that he grew up with. In his own words, “it’s time to show people on this side of the Atlantic the food that made me obsessed with eating, then cooking”.
