Our buddy Kieran McLaughlin has finally fulfilled his lifelong dream of opening a place of his own, and yes, he’s knocked it out of the park. Introducing Pauli, Copenhagen’s latest home run.
Kieran started out under Christian Puglisi at Ralæ, but we first crossed paths at La Banchina, on the Refshaleøen waterfront, where he oversaw one of the city’s best value, and most imaginative tasting menus. With a commitment to ethical local ingredients, Kieran quickly developed a cult following among the city’s chef community (his impromptu post-service jam sessions also became the stuff of legend).
Fast forward to today and you have Pauli, Kieran’s captivating corner spot in Sydhavn. Underpinned by some very serious cookery, it’s the effortlessly laid back neighbourhood restaurant he always wanted to open. With a focus on ‘new Nordic’ cuisine infused with international influences, Kieran’s been making waves with bold creations like ‘squid with chanterelle, mussels and brown butter’; ‘lamb with beach kale, baby leeks, and tarragon’; and ‘strawberry & honey ice cream with rose, matcha, crumble, and bee pollen’.
