Thoughtful, inquisitive and crazy talented, Palle Paulsson joins us for the latest chapter in a remarkable food story that’s taken in some of the world’s most progressive kitchens, from Per Se (NYC), Mikla (Istanbul) and Ancestrale (Copenhagen), to a constellation of some of Sweden’s very best (Daniel Berlin, Agrikultur, Ekstedt, Kock&Vin).
Following a string of sell-out pop-ups around Europe, Palle joins us for the first time with an immaculate nine-course tasting menu that’s the synthesis of all the thousands of ideas, techniques and happy accidents he’s collected along the way.
In Palle’s own words, the menu is “more rock and roll than fine dining”. We’re talking ‘Raw Beef, Beetroot, Onion Oil, Watercress, Elderberry’; ‘Monkfish, Fermented Asparagus, Sandefjord Sauce, Sorrel’; and ‘Pancetta, Peas, Shallot, Yuzu, Brown Butter, Mint, Hazelnut’.
