Our grande amigo argentino Pablo Lagrange returns for his third spin on the Carousel. Now at the helm of LA TEXTIL, an impressive new culinary and craft beer laboratory housed in a giant warehouse in Barcelona’s Gothic quarter, Pablo has been having a wild time with the Josper grill, exploring cold-smoking textures, ashes, aromas and colour. Pablo describes the results as ‘simplified complexity’. Ideas like tomato with strawberry water look simple on the plate, but peel back the layers and you can see the full gamut of mind-blowing techniques honed in the kitchens of Noma, Relæ and Mugaritz at play.
