Meet Mathieu Rostaing-Tayard, one of the most talented French chefs of his generation. Don’t believe us? Just ask Le Fooding®, popular barometer of France’s hottest new wave restaurants, who awarded him this year’s prestigious ‘Fooding d’Honneur’ award.

Mathieu trained under titans Pierre Gagnaire, Nicolas Le Bec and Éric Briffard, but it was at Café Sillon and 126 in Lyon where he blazed his own trail, perfecting his signature brand of inventive, market-driven neo-bistro cooking. His extensive travels have also shaped his approach, including formative spells in the kitchens of heavyweights Massimo Bottura and Virgilio Martínez.

After pressing the reset button during the pandemic, Mathieu is just about to launch an exciting new version of Sillon in Biarritz, alongside recent opening MicroSillon in Lyon, an easy-going wine bar where characteristically explosive flavour combos are the order of the day.

Biarritz awaits you in the summer. In the meantime, come and experience one of France’s brightest stars at the top of his game right here in Fitzrovia.
