After blowing our minds back in 2017 with his experimental New Nordic interpretations of the flavours of his homeland, Karlos Ponte Maldonado is back for another week of impressively intricate, Venezuelan-accented creations.
We first met Karlos five years ago, shortly after the opening of Taller [ta̠ˈʎe̞ɾ], the Copenhagen fine dining spot that he set up with ex-NOMA pals Luis Moreno and Jacob Brink Lauridse. There he developed his signature style, cleverly reimagining traditional Venezuelan dishes with local Danish produce and modern European techniques.
With plans afoot for a new Copenhagen project, we’re thrilled that Karlos has squeezed in time for a return to London. His menu this time features more imaginative dishes inspired by the “Caribbean shores, dense Amazonian jungle, vast grassy plains and towering Andes” of Latin America. Think caviar arepas; scallop, sea buckthorn & amarillo ceviche; wild mushroom asado negro; and lamb belly with cashews & guasacaca (Venezeula’s answer to guacamole).
