One of the most exciting new voices in Chinese food, John Javier is someone we’ve wanted to cook with for a very long time. Take one look at his Carousel menu – a greatest hits compilation of JJ classics – and you’ll understand why…
We’re talking ‘Xi’an Flatbread, Roasted Bone Marrow & XO Sauce’, ‘Raw Lamb, Oyster, Enoki, Roasted Lamb Fat & Ash’ and ‘Xinjiang Spiced Aubergine, Courgette & Black Garlic’. And that’s not even the half of it.
The talented young Australian started out in the kitchens of heavyweights Quay, Momofuku Seiobo and Noma (where else?), before opening Master in Sydney, a refreshingly rock’n’roll modern Chinese restaurant that counted René Redzepi among its fans. His next move, Happy Paradise in Hong Kong, quickly gained a similarly cult following, with the late Anthony Bourdain describing his visit on Parts Unknown as “the most stunning meal” he’d eaten in the city.
John is now group development chef of the Pachamama family of restaurants here in London, who have very kindly loaned John to us for a week of inventive Chinese cooking that’s guaranteed to blow your minds.
