Jeremy’s agnostic, inquisitive approach has been shaped by stints at Hibiscus, Noma and Dinner and he’s now relishing the prospect of tapping into the rich culinary heritage of Nigeria, Ghana, Senegal and beyond, applying modern techniques to traditional ingredients like dried crayfish and fermented locust beans to create delightful intensity and elegant contrasts of flavour and texture. Jeremy has a knack for finding ways to optimise each ingredient’s “inherent delicious properties”, which makes for pretty special dining experience. Trust us.
