Iñaki comes from a long line of proud Basque farmers, foragers, fishermen and hunters from the small town of Derio. Those ties to the land have informed his journey as a chef, working in some of the world’s most celebrated kitchens where provenance and locality are married to breathtaking invention (Mugaritz**, Pure C**, Noma*** and Nerua*).
Since 2019, Iñaki has been forging his own path, popping up around the world with a succession of stunning tasting menus that reflect his unique style. Since his week with us, he’s already set Thailand, New York and Zagreb alight.
Get set for a fortnight of beautiful and innovative Basque-influenced creations including mussel croquetas with seaweed; scallop, radish & olive escabeche; wild mushrooms with egg yolk & spiced chicken jus; and hazelnut, lemon & honey brûlée.
