Basque for ‘George’, Gorka is the so-hot-right-now-you’re-going-to-need-a-fire-extinguisher project from George Husband (Chez Bruce, Elystan Street, Trinity, Brat) and George Brown (Camberwell Arms, Café Cecilia, Waterman Arms).
The homonymous duo have been selling out residencies around town with their infectious mash up of classical French, regional Italian and – yes – Basque open fire recipes, techniques and moments of inspiration that after several iterations and a couple of bottles of wine, might lead somewhere else entirely. The two Georges like to colour outside the lines, and the results are never anything less than super tasty. Think ‘BBQ veal belly, oyster, chilli’; ‘Cajun ‘quenelles de brochet’, andouille sausage’; and ‘Secreto Iberico, koji, peanut mustard, grilled gem & betel leaf’.
Every generation throws a hero up the pop charts. We keep our ears close to the ground, and from what we’re hearing, 2025 is set be Gorka’s.
