Dimi recently left Ernst in Berlin, where he was part of a three-man team serving multi-course tasting menus to just eight lucky guests at a time. Embracing Ernst’s Japanese-inspired approach, his own style of cooking is all about “flavours, textures and finding ways to get the best out of every single ingredient”.
Since leaving Berlin, Dimi has been hot footing it around the world, linking up with Rodolfo Guzmán once again for the Boragó pop-up in Madrid (before Ernst, Dimi headed up the restaurant’s R&D team in Santiago). In May, he will open Òre, an eight-seater fine dining restaurant of his own Bangkok.
