Voted one of 2022’s ‘World’s 50 Next’ – a list of pioneers changing the world of gastronomy – Debora Fadul’s passion for her country and its produce knows no bounds, and is the raison d’être behind her restaurant Diacá. 

After training at culinary school, setting up her own catering company and hosting a string of super successful pop-ups, Debora founded Diacá in 2018 as an ode to Guatemala’s rich culinary diversity. Since opening, it’s been at the forefront of innovation and promotion of Guatemalan cuisine thanks to the way Debora uses food to connect diners with deeper values and meanings, like nostalgia, ancestral knowledge and the culture of the land. 

Join us for six courses of creative, produce-driven dishes packed with explosive Guatemalan flavours. Highlights include ‘Mackerel Tostada, Watermelon soup, Mustard Greens, Pickles’; ‘Grilled Corn, Chicharron, Coriander & Blue Cheese Salsa, Pumpkin Seeds’ and ‘Slow-Cooked Beef, Pickled Pear, Salted Garlic Sour Cream, Chimichurri’.
