Bao La’s love of cooking sparked as soon as he was old enough to wrap rice paper rolls at his parent’s Vietnamese restaurant in Brisbane.
After training under Dan Hong (Ms G’s, Mr Wong) in Sydney, Bao headed to Hong Kong, sharpening his skills alongside Jowett Yu (then Ho Lee Fook), before opening trailblazing Vietnamese grillhouse, Le Garçon Saigon, and cult bánh mì hotspot, Le Petit Saigon. There Bao introduced the city to authentic dishes that were then rarely found outside Vietnam.
Bao now splits his time between Ho Chi Minh City and Brisbane, tending to his urban farm and co-hosting his popular podcast, Broken Rice. When the urge to cook takes over, Bao will pop up at some of the hottest spots in Paris, New York, Bangkok, Shanghai and… London.
For his menu with us, Bao will be serving “Cơm Nhà”, a family-style, everything-on-the-table feast designed to be shared. Showcasing the full breadth of this rich and varied cuisine, dishes include ‘Hakka-Style Salt Poached Chicken, Ginger Relish’; ‘Tofu-Stuffed Roasted Tomatoes, Tomato Sambal’; and ‘Pork Belly Braised in Coconut & Fish Sauce, Fried Duck Egg’, all served with steamed rice and dipping sauces… Hell yes.
