Born into a Sino-Réunion and Moroccan household, Amandine Sepulcre-Huang’s distinctive culinary style has been stirring up some serious buzz in Paris.

 

One of Le Figaro’s chefs to watch, Amandine cut her teeth at some of the city’s finest – Dersou, Le Copenhague* and cult Pigalle hotspot, Bleu Bao – before taking the reins at Le Mary Celeste in early 2023. At the vibey seafood and cocktail bar in the heart of Le Marais, she serves a small-but-perfectly-formed menu of seasonal sharing plates that, while French at heart, are deliciously peppered with Asian influences.

 

For her week at Carousel, genre-defying dishes include ‘Celeriac, Mangalitza Fat, Squid Ink, Wild Garlic’; ‘Duck Pithivier, Chanterelles, Five-Spice, Demi-Glace’; and ‘Koji Rice Sorbet, Fish Sauce Caramel’.
