For the latest chapter in our Rémy Martin Sustainable Supper Club series, Bristol bistro Wilsons will be giving us a taste of the impeccable, nature-driven cooking that has cemented its reputation as one of the city’s must-visit dining destinations.
Sustainability is at the heart of what founder and head chef Jan Ostle and partner Mary Wilson do every day. Their ever-evolving tasting menus are informed by whichever vegetables and herbs are ripe for picking in the restaurant’s garden-farm, as well as the finest meat, fish and dairy they can procure from their carefully chosen community of suppliers. It is this dedication to using only locally and ethically-sourced produce that led to Wilsons earning a Michelin Green Star in 2022.
Jan joins us for one night only, with a six-course tasting menu that shines a light on hyper-local, seasonal British produce, paired with drinks by Rémy Martin. Expect imaginative dishes like 80-day aged belted Galloway buckwheat tart; mackerel, marinated leeks & smoked crème fraîche; fallow deer, Crown Prince pumpkin & Szechuan pepper; and burnt Italian meringue with herb sorbet.
