Long-standing legends of the West Country food scene and early pioneer of sustainable cooking in the UK, The Ethicurean have been creating unforgettable, natured-led culinary experiences from their walled garden in Somerset for well over a decade (including a wonderful week with us back in 2018).
Fresh back from an impressive stint on the latest series of Great British Menu, head chef Mark McCabe joins us with an innovative seven-course menu designed to ‘wow the senses and be connected with nature’. Whether grown in the garden itself, or foraged, fished or shot just outside its walls, each ingredient is locally-sourced and artfully put together. Think ‘Barbecued Brassicas, Spring Herbs’; ‘Venison, Celeriac, Wild Garlic’; and the delightful-sounding ‘Koji Madeleines’.
The Ethicurean’s unwavering dedication to connecting the land and the seasons to the plate makes them an ideal partner for our Carousel x The Botanist gin series, championing forager-chefs from around the British Isles.
