Of the World’s 50 Best Restaurants, three are in Lima. If we had to put money on a fourth chef entering the list, it would be rising star Ricardo Martins. Since earning his stripes at Rafael (No.46 LatAm’s 50 Best), Ricardo has gone on to open his own inspired restaurant, Siete.

Combining the best seasonal Peruvian produce with age-old Japanese technique, Ricardo is putting his own spin on Nikkei cuisine, resulting in boldly acidic, fresh and punchy dishes like ‘Silverside Boquerón, Avocado, Tomato, Leche de Tigre’; ‘Braised Short Rib Fāxìao, Fried Rice’; and ‘Soy & Mirin Tuna, Chive Oil, Pomme Purée & Yuxiang’. 

Despite being housed in a discreet, century-old building in Lima’s Barranco district, Siete isn’t speaking in hushed tones. Ricardo’s inventive dishes, tastefully adapted old school cocktails and huge soundtracks have attracted the attention of the World’s 50 Best Discovery and Lima’s younger, discerning restaurant-goers alike.
