Every {PAIRED} starts with a spark. The creative teams behind Carousel and AVA dream up unexpected pairings, inviting world class chefs and DJs to build something special together — a one-off world shaped by their stories, tastes and obsessions, expressed through menu and music.

This NYE, the pass belongs to a chef who’s quietly redefining what a tasting menu can be. Meet New Zealander George McLeod — recent recipient of 1 Knife from the Best Chef Awards — bringing his progressive, closed-loop cooking to Fitzrovia for one night only. George is one half of the much-lauded SEM, the tiny Lisbon restaurant that he runs with partner Lara Espírito Santo. Together they’ve built a cult destination for thoughtful, conscious cooking that is outrageously delicious.

For {PAIRED}, George is teaming up with groove maestro Dan Shake to create a collaborative deep-dive into texture — dishes and tracks echoing, riffing and building on one another as the night unfolds. Softly building into a crescendo of sound and flavour.
