Lifelong friends and 2020 Carousel alumni, Omer Shadmi and Daniel Zur, have taken Israel’s culinary capital by storm as the joint heads chefs of Alena at The Norman Hotel, Tel Aviv.

Pals Omer and Daniel grew up together in the Jezreel Valley. Between them the pair have risen through the ranks of acclaimed kitchens like The Barbary and River Café (London), Pauly Saal (Berlin) and L28 (Tel Aviv). Now they are making waves of their own, weaving together Israeli and Middle Eastern influences and showcasing their love of fresh, colourful ingredients and bold flavours.

Think ‘road style’ bagels with two different toppings (zaatar, and sumac onions; and grated tomatoes and spicy mashwia); grilled gem lettuce, hot yoghurt sauce, brown butter and almonds; and Galilee egg yolk raviolo, feta cheese, aubergine oregano butter and lemon.
Omer and Daniel’s food is designed to be shared between friends and mopped up with pillowy flatbreads straight from the oven. Welcome back guys…
