The opening of the effortlessly cool Meroma in 2017 cemented Mexico City’s status – and the buzzy neighbourhood of Roma Norte in particular – as one of the most exciting dining destinations in the world.

CDMX local Mercedes (the ‘Me’) and her Midwestern partner Rodney (the ‘Ro’) boast a wealth of experience cooking in fine dining restaurants around the world under the likes of Daniel Bolud and Joel Robuchon. Combine that CV with an outrageous abundance of indigenous produce and a converted 1980s modernist house, and you have Meroma – a restaurant that’s pushing Mexican cookery in a new direction.

Dishes like ‘Scallop Mi Cuit, Smoked Shiitake, Poblano Aioli, Mandarin & Sicilian Lemon’; ‘Orecchiette with Lamb Merguez, Broccolini, Bread Crumbs, Parmesan’; and ‘Grilled Pork Chop, Chipotle Rub, Marinated Dates, Grilled Ramps, Mustard Cress’ are landing them in practically every ‘must-visit’ guide to the city.
