Matteo Morbini is a chef who’s going places. One of Italy’s brightest young talents, the hyper talented Tuscan joins us ahead of the launch of his next project in New York.
Raised on the classics in some of Italy’s most respected fine dining kitchens, Matteo supercharged his culinary education with formative stints in Sydney, working for Peter Gilmore at Quay, and London, where he trained under legends like Alyn Williams and Gordon Ramsay.
The result is a wonderfully imaginative style of his own that plays fast and loose with the doctrine while still remaining rooted in all the things that we love about Italian food. Think courgette ‘alla scapece’, wild nettle, chinotto; cappelletti ‘ajo,ojo e peperoncino’; and chestnut ‘bomboloncino’, homemade ricotta, pickled elderflower. Get a taste of Matteo’s cooking here.
Matteo’s philosophy is all about maximum respect for his chosen ingredients. That and staying humble. With fans including the legendary Tom Colicchio – they just did a pop-up together in NYC – let’s see how long he’s able to keep his feet on the ground.
