If you were fortunate enough to catch Kooze’s residency in December before it was cruelly cut short, you’ll know what a rare talent he is…

Two postponements and a last minute lockdown weren’t enough to stop him from executing one of the most special menus we’ve ever had the joy of serving here (albeit for just two nights). Seven months on and he’s back with the frankly unmissable summer edition, which will also be Mark’s last as Carousel’s head chef. After three and a half years, Kooze is moving on to pastures new, taking up the head chef position at two-Michelin-star Da Terra alongside the brilliant Rafael Cagali.

We’re delighted for Mark, and for you, as you get to experience even more of his “soigné” creations before he goes. We’re talking ‘Cornish Yarg Gougères’, ‘Sweet Corn and Summer Savory Farfalle’ and ‘Yoghurt, Strawberry and Marigold’, which looks like a Magnum but tastes more like heaven.
