Hashi is the thrilling culinary handshake emoji from Mexican-Japanese rising star, María Hashimoto.

The no-fixed-address omakase has fast become the toast tostada of the Mexican pop-up world, drawing crowds from sea to shining sea, via sell-outs nights in the capital’s hottest bistros, natural wine bars and cinemas (who knew?).

Born on the seafood pilgrimage trail in Los Mochis, Sinaloa, with roots in Fukui, María effortlessly weaves the best of both worlds into elegant, hyper-original dishes like ‘Mahi-Mahi, Habanero Salt, Avocado Mousse, Blue Corn Tostada’; ‘Watermelon, Seaweed, Shichimi, Grasshoppers’; ‘Oyster, Habanero Salsa, Pickled Onion, Yuzu Kosho, Nori, Radish’; and ‘Crab, Mustard Seed, Negi, Apple’.

Schooled in the kitchens of Enrique Olvera, from Ticuchi to Pujol, María’s uplifting flavours are underpinned by razor sharp fine-dining technique. But make no mistake, these super fun, super tasty crossover creations are all her own. And you’re going to love them…
