Introducing Mareida, the hotly anticipated London opening with Chilean culinary icon Carolina Bazán and her sommelier wife Rosario Onetto.
Named Latin America’s Best Female Chef in 2019 by the World’s 50 Best, Carolina has pioneered a thrilling ‘New Chilean’ style at Santiago hot spot, Ambrosía, that reflects the “quirky, understated elegance” (Nicholas Gill, NY Times) of the amazingly cosmopolitan contemporary Chilean gastronomic landscape.
Incorporating influences from Patagonia to the Atacama, not to mention a whole kaleidoscope of ideas from Santiago’s thriving Pan-American migrant populations, Carolina’s playful Mareida menus will feature the likes of ‘Scallop Parmesana’; ‘Grilled Sea Bass, Quinoa, Avocado, Pebre, Chilli’ and ‘Lamb Corn Cakes’, alongside fine dining entremeses like ‘Fish Tartare with Granita in an Ice Cream Cone’, a bread course of ‘Fried Pumpkin Pastry, Potato Pancake, Seasoned Butter’ and theatrical petit fours of ‘White Chocolate, Passion Fruit, Black Sesame and Quinoa Moai’ (AKA Easter Island statues).
