Maizajo, one of Mexico City’s most beloved taquerías, is making its way to London. Known for its fast-paced, laid-back vibe, Maizajo has quickly become a staple in Condesa, drawing in huge crowds every night with its iconic tacos served on freshly nixtamalized tortillas.
Founder Santiago Muñoz is on a mission to revive maíz criollo, Mexico’s heirloom corn. After opening an insanely popular tortillería in Roma, Chef Santiago expanded his vision with this groundbreaking three-in-one destination in Condesa, combining a mill, taquería, and restaurant under one roof. Fresh tortillas crafted daily using exclusively nixtamalized heirloom corn provide the base for innovative dishes like their ‘oven-roasted blue corn tostada with avocado purée, yellowfin tuna, and a sesame & soy dressing,’ and their celebrated ‘Tamal de Boda’—a delicate corn tamal filled with stewed poblano chile, leeks, and chard in a rich achiote, tomato and habanero salsa.
