After successful stints at The French Laundry (***) and Cyrus (*), Marty Winters and Alex Pitts hung up their chefs jackets to open their own winery, Maître de Chai (meaning ‘keeper of the cellar’) back in 2012.
There, the duo make high-quality, low-intervention wines that showcase the region’s diverse terrain, carefully sourcing grapes from a varied selection of unique local vineyards, with very special results.
Now, for one weekend only, the Maître de Chai duo are back in the kitchen, joining us in No. 23 with an epic à la carte menu of ‘Ital-Cal’ small plates to accompany their very special wines. Think cacio e pepe focaccia; pea and mozzarella arancini; Caesar salad; and egg yolk & ricotta ravioli…
