A leading name on Vancouver’s contemporary music, art and culinary scenes, Mexican-Canadian Ernesto ‘Kut’ Gomez blew our minds in 2019 with one of all the all-time great Carousel menus.
Working directly with families and growers in remote communities in Oaxaca, Chiapas and Tabasco to source single-origin products, from chillies and spices to beans and cacao, Kut has an encyclopaedic knowledge of Mexican bio-diversity, which he combines with a deep respect for indigenous cultures and traditions, and mad skills (that’s the technical term), to create magic in the kitchen.
This time round, Kut has created a polyglot menu that’s representative of his home city, Vancouver, as well as his own Mesoamerican roots. Alongside First Nations influences from both Mexico and the Pacific NW, dishes like “Scallop and Chorizo Dumpling, Squid and Onion Consommé, Chiltepe Chilli Oil” and “Salish Fry Bread with Clove Syrup and Sichuan Pepper, Salted Maple Caramel and Mixed Berry Dipping Sauces” incorporate a variety of Asian ingredients and techniques, a nod to the city’s thriving multiculturalism and the food that Kut loves to eat.
