Fresh from six years at three-Michelin-star L’Arpège under the tutelage of Alain Passard, Korean rising star Jihyun Kim is gearing up for a Parisian opening of her own: Ébène.
Born in Korea, classically trained in France, Jihyun Kim’s food combines the clarity of French technique with the quiet intensity of Korean flavour. Her impeccable CV includes stages at Têtedoie* (Lyon) and Septime* (Paris) but it was her time as sous chef at L’Arpège that opened her eyes to the art and artistry of vegetable-led cooking; building depth from simplicity, using smoke like seasoning and plating with purpose. Now Jihyun is ready to strike out on her own.
