Fresh from leading the kitchen at Mexico City’s globally-renowned Pujol (#13 in the World’s 50 Best), super talent Jesús Durón is embarking on a brand new venture right here in London and we couldn’t be more excited.
Teaming up with Yardbird Hong Kong co-founder Lindsay Jang, they are working on opening Dué next year, bringing a taste of globally inspired, seasonally-focused upscale dining to the capital.
Pujol aside, Jesus has a truly breathtaking CV. Before answering the call of Enrique Olvera, Jesus traversed some of Europe’s most renowned kitchens from Martin Berasategui (***) in the Basque Country and El Celler de Can Roca (***), to Alexandre Couillon’s La Marine (***) and Elmer, Paris, which he opened with longtime friend Simon Horwitz. Dué’s approach will be a reflection of this journey, with menus that get the very best out of seasonal ingredients to create bold, memorable dishes infused with both Mexican and modern-European flavours. “Nature guides my menu”, says Jesús, “I strive to use the best ingredients at their peak of maturity, respecting their flavors and preparing them as simply as I can.”
For this exclusive five-night preview of what’s to come at Dué, Jesús will be taking inspiration from the late winter-early spring bounty with dishes like ‘Scallop Tsukune, Corn Dashi, Egg Yolk’; ‘Cuttlefish, Green Mole, Orache Leaves’; and ‘Grilled Razor Clams, Hoja Santa Pil Pil’.
