Rodriguez’s modern take on Northern Argentine cooking proved so popular first time round, even the cows were queuing around the block to sign the petition to put his ‘Charcoal-Grilled 28-Day Dry-Aged Sirloin’ back on the menu.
Javier’s impressive CV reads like a mouth-watering bucket list of the best places to eat in the whole goddamn world – Noma (Copenhagen), Viajante (London), Tetsuya’s (Sydney), Restaurant Andre (Singapore) and La Gloria (Lima) – but after years on the road, Javier has finally put down roots in his hometown of Córdoba with the opening of El Papagayo, a small but perfectly formed restaurant with big ambitions: “to shift people’s perceptions of modern gastronomy and spark off a nationwide culinary movement”.
