Genaro Celia y Agustín Mikielievich are ripping up the rulebook at their white-hot Chamberí market tapas joint, bringing fine dining creativity to the people, without the pretense or the price tag.
Lauded by the critics of El País and El Mundo, the Colombian-Argentine duo are on a mission to democratise the flavours and techniques of Asian-influenced Latin American fine dining. Here, everything is meant to be shared — with friends, with strangers, with sticky fingers and wide eyes.
Dishes are served fast, fresh, and frenetic. You eat with your hands, you lean into the noise, and with a menu packed with big-hitters like their ‘Beef short rib ‘tucumana’ empanadas’ with chimichurri; ‘Gnocchi, huancaina carbonara, crispy guanciale, coriander oil’; and ‘Mushroom taco, Korean brava sauce, spiced panela’ it’s no wonder Insurgente has become a place of pilgrimage for young madrileños who know where to find the best value eats in the city.
Genaro and Agustín are all about breaking down walls: between cuisines, between people, and between high-end and humble. The duo have turned the market stall into one of Madrid’s most exciting culinary experiences — you’d be mad to miss it.
