Iñaki Bolumburu

Born in Derio, a small town on the outskirts of Bilbao, Iñaki comes from a long line of proud Basque farmers, foragers, fishermen and hunters. Those ties to the land have informed his journey as a chef, working in some of the world’s most celebrated kitchens where provenance and locality are married to breathtaking invention (Mugaritz**, Pure C**, Noma*** and Nerua*, currently no. 32 in the World’s 50 Best).

Since 2019, Iñaki has been forging his own path, popping up around the world with a succession of truly stunning tasting menus that reflect his unique style. Iñaki describes his approach as “a cuisine with strong Basque roots and identity but with some eclectic influences from my travels and experience abroad”. We just call it effing awesome.
