Ina Niiniketo is an incredibly cool cookbook author and chef from Helsinki. Ina recently moved home to Finland after eight years in Stockholm, where she was a mainstay of some of the city’s very best kitchens, most recently The Sparrow, Mathias Dahlgren’s acclaimed French bistro, and Tak, where she was sous chef to Frida Ronge. Next on the agenda? A first restaurant of her own, back in her hometown. But first, Carousel.
Ina is passionate about intense flavours and working with the very best seasonal ingredients available. Edible flowers are a regular feature on her imaginative menus, and they also happen to be the protagonist of her beautiful debut cookbook, Flowers On a Plate.
Ina’s food is based on a love of timeless Parisian elegance combined with Japanese and Nordic minimalism. Get ready to fall in love with signature dishes like Ina’s ‘Scallop, Purple Shiso, Umeboshi, Radish’, ‘Charred Courgette, Courgette Flowers, Yuzu Kosho’ and ‘Finnish Liquorice Macaron’.
