Ichi
When the words Nordic and Japanese run in the same sentence, you already know you’re on to a winner. Ichi is the work of head chef, Saori Ichihara, and brothers Jesper and Kim Kvarnefält who collectively have just one goal – to bring Japanese technique, new flavours and creative ideas to Stockholm’s dining scene. The trio have outdone themselves…
Floor to ceiling curtains keep Ichi hidden from the street, but once inside lucky diners in the know are greeted with glasses of sake and beautiful bento boxes. The set ‘yōshoku’ (‘Western-style’) dinner menu changes according to the seasons, guaranteeing super fresh ingredients and authentic flavours. And, of course, it’s in the best of hands… Saori who won the Stella award for Best Female Chef last year, was born in Osaka and moved to Sweden in 2014, cutting her teeth at some of the country’s most raved about joints including Esperanto (*) and Oaxen Krog (**).
And the food? Elegant but understated, ambitious but balanced – dishes like ‘Chawanmushi on Blue Shell Mussels from Mollösund with Toasted Seaweed Oil, Salted Pork Fat and Nasturtium’ are not only visually stunning but are an example of the knowledge and attention to detail that pervade the whole menu.
