Hugo Durán is a captivating character. As a chef with proudly indigenous roots, he has developed an unmistakable culinary language of his own, inspired by his travels through central Mexico, Oaxaca and the Yucatán, and his lifelong fascination with the biocultural diversity of his homeland.
Throughout his culinary career, Hugo has made it his mission to celebrate these fascinating traditional flavours. His food is made for sharing, the central tenet of the culinary culture he lives for. Dishes like the ‘Tikin Xic Mayan Roasted Turbot, ‘Yanikeke’ Dominican Tostada’; ‘Pulpo Diablo, Jersey Royal Confit’; and ‘Hibiscus Nicuatole, Lemon & Cactus Sorbet’ on his Carousel menu are as delicious as they are beautiful.
Now back in Mexico City after the success of Mayan village community pop-up Ka’an, nestled in the national park just outside of Tulum, Hugo is working on new project, Sosoki. Teaming up with chef Xarem Guzmán and a group of renowned local architects, Hugo aims to explore alternative models of hospitality and design in the capital. But first, a hotly anticipated return to Carousel.
