At Bubala, Helen earned rave reviews and a legion of admirers for her deeply personal, envelope-pushing style of innovative, ‘exuberantly vegetarian’ cookery.
After learning from the best at The Palomar, Barbary and the Ottolenghi Test Kitchen, Helen Graham put the first Bubala on the map with her culinary lexicon of *massive* flavours drawn from Eastern Europe, the Middle East and North Africa, and her own Jewish diasporic roots. A smash hit sister site in Soho quickly followed.
Now riding solo, Helen has been filling dining rooms around London. For her week at Carousel, she’s created a very special menu packed with bold and vibrant dishes like ‘Halloumi, Burnt Aubergine & Camomile Honey’; ‘Grezzina Courgette, Preserved Lime Peanut Tahini, Fennel, Kaffir Lime’; ‘Mushroom Shish Barak, Whey Butter, Apple Harissa’; and ‘Labneh Ice Cream, Rhubarb, Brik, Black Lime Sherbet’.
